Cucumbers, Kirby

Cucumbers, Kirby are the variety that is mostly used in making pickles, because they retain their crispness. Sometimes we just munch on them raw, much in the same way that we munch on a carrot or an apple. See more about them below.

More About Kirby Cucumbers:

Kirby cucumbers are about half the size of a regular cucumber, with all the flavor of the full-sized cucumber. Kirbies make the snappiest pickles and they’re also good raw. Their thin skin doesn’t need to be peeled, if it is not waxed, which they are not when purchased at farm stores. Just wash and eat. Or dice and toss with your favorite dressing in a salad. We rarely see Kirby cucumbers in supermarkets. The ones we purchased are from a farm store, but they are usually more expensive that the regular cucumbers.

Some background information:

Over the years, people have been asking us, “What do vegans eat?” This is probably because they first think about a flesh product as the main meal. After that they then think about everything else as a side dish. So, we began publishing the huge variety of plant foods that are available for us to eat in this section of our web site. Additionally, we are always on the lookout for something new to add to our collection. This way we can experiment with to incorporate into our meals. We have also found that eating mostly unprocessed plant foods make us much more healthy. It’s a great way to live and our foods provide almost all of our vitamins.
