Oyster mushrooms are one of the milder tasting mushrooms, but they have a distinctive flavor. We purchase dry oyster mushrooms in one pound packages (D’Allasandro) from the co-op, because of their convenience and storability. There are also other suppliers online. They are great in soups and stir-fries, and reconstitute quickly when soaked in water.
