Pink, white, and green peppercorns all come from the same plant: Piper nigrum of the family Piperaceae, a trailing or climbing shrub grown in hot climates. The color is determined by the stage of ripeness at harvest time. Black peppercorns are really green when harvested, but turn black when dried. From the photo, we can see that not all of the peppercorns are fully black.  Since the 1930’s Brazil’s pepper plantations supply most of the peppercorns used in the United States. The different colors of this pungent spice have slightly different aromas and tastes. Green peppercorns are slightly sweeter, white are hot and spicy, red are not very hot but very aromatic, and black peppercorns are pungent and spicy. We believe that freshly ground peppercorns have a superior flavor to that of factory ground.  See Nutritional Chart below.
