Apple cranberry cake or bread is a delightful vegan treat to go with any meal including breakfast, dessert, Thanksgiving, or as a snack. Preparation time is about 15 minutes, and baking time in a microwave oven is only 10-12 minutes at 1000 watts. Baking time in a conventional oven at 350 degrees F. could take 30 minutes. Since this recipe contains no preservatives, we suggest storing any leftovers wrapped or covered in the refrigerator.

Apple Cranberry Cake Preparation:
We begin by placing all the dry ingredients in a mixing bowl and mixing thoroughly.
In the container of a high speed blender, place the cored apples, the cranberries, and the dates. Cover the container and run the blender at high speed until the ingredients are creamy smooth. Remove the container from the blender and pour the contents into the mixing bowl with the dry ingredients. Use a spoon to remove any of the remaining blender container contents and put into the mixing bowl. Mix well to ensure that there are no dry ingredients left in the mixing bowl. If the dough is too stiff, add a little water and mix well again.
Pour and or spoon the dough into a two quart covered glass baking dish, smooth the top, cover and bake for 10-12 minutes in the microwave oven at 1000 watts. After 10 minutes, check the cake through the window of the microwave oven while it is running to see if it is boiling along the edges. If it is, remove the apple cranberry cake from the oven to see if it is done, and if baked, set on a wire rack to cool.
When cool, the cake can be cut and served in wedges right out of the baking dish, or the cake can be loosened with a flat table knife, and inverted onto a large plate for serving.
If you want to serve the cake or bread as slices, bake in a covered loaf or rectangular baking dish or pan, and invert onto a plate before slicing.
