Butternut squash stuffed, apples, raisins, walnuts makes wonderful vegan main dish for any festive or holiday meal such as Thanksgiving. Preparation time is about 15-20 minutes, and baking time in about 35-40 minutes in a microwave oven or a little over an hour in a conventional oven preheated to 350 degrees F. Plan on using one half of a medium to large size butternut squash per adult serving, and smaller ones for children.

Wash the butternut squash and cut in half lengthwise. Scoop out the seed, and set the squash aside in a covered glass or ceramic baking dish or large roasting pan for baking in a conventional oven. (Squash seed may be saved for toasting.)
For 1 large or 2 medium size butternut squash, wash the apple and cut lengthwise into eight wedges and remove any remaining stem and core. Cut wedges across into small pieces and place in a small mixing bowl. Add the raisins and walnut pieces. Sprinkle with a little cinnamon and mix well. If you are stuffing more butternut squash, increase the quantities accordingly.
Fill the cavity of the butternut squash 1/2 full with apple juice, and stuff the cavity in each butternut squash half and sprinkle some additional cinnamon on the surface of the squash and stuffing. Cover the baking dish and bake in a microwave oven on “high” or in a conventional oven at 350 degrees F. until the squash is tender.
