Peanut Butter Carob Fudge Dip

Peanut butter carob fudge dip is a delicious vegan treat that can also be used as an icing or a topping for vegan “ice cream.” Preparation time is about 10-15 minutes. Leftovers, if there are any, can be stored in a covered container in the refrigerator for several days.

Peanut Butter Carob Fudge Dip Ingredients:

1 Cup Water
1/2 Cup Carob Powder (dark or medium roasted)
2/3 Cup Dates (pitted)
1/2 Cup Peanut Butter (natural, smooth, unsalted) OR 1 cup Peanuts (dry roasted, no salt)
1 tsp. Vanilla Extract

Cooking Utensils:

Measuring Cup, Liquid
Measuring Cups, Dry
Measuring Spoons

Peanut Butter Carob Fudge Dip Preparation:

Place all of the ingredients in a high speed blender, and blend at high speed until the peanut butter carob fudge is smooth. To thicken the fudge, add a little more carob powder and run the blender at high speed until all the additional carob powder has been blended into the fudge dip.

Serve with fruit, such as apple slices, oranges sections, or banana pieces (you will need a fork for dipping the banana pieces).

This fudge sauce also makes a great icing for cakes and brownies, and for a topping for vegan “ice cream” such as banana cream.
