Tofu Cream Cheez

Makes 1-1/4 cups

1/4 cup raw cashew pieces
3 Tbsp. water
2 Tbsp. fresh lemon juice
1 Tbsp. brown rice syrup (or 2 tsp. maple syrup
1 cup firm tofu, crumbled
3/4 tsp. salt
Pinch of garlic granules

Place cashew pieces, water, lemon juice, and rice syrup/maple syrup in blender, process a few minutes until thick and creamy. Add salt, crumbled tofu and garlic granules and process until very smooth. Chill thoroughly in refrigerator before serving.
