Roasted Pumpkin with Plantain Stuffing

Roasted pumpkin with plantain stuffing is a delightful vegan treat for Thanksgiving or any other festive meal. The stuffed pumpkin makes a beautiful centerpiece for the table. This recipe will serve 8 or more adults, and takes about three hours to prepare and cook. Leftovers can be covered with plastic wrap and stored in the refrigerator for a few days.

Roasted Pumpkin with Plantain Stuffing

Ingredients:

1 Pumpkin, medium size (as large as will fit in your roasting pan)
Plantain Stuffing
Cinnamon, Ground (optional)

Large Cooking Spoons

Roasted Pumpkin with Plantain Stuffing Preparation:

Follow the instructions for Stuffed Pumpkin and Plantain Stuffing and stuff the pumpkin with the plantain stuffing.

When the stuffed pumpkin is fully cooked, serve on a platter with the lid (pumpkin stem top) removed.  Scoop out some of the stuffing and place on a plate.  Then, using the side of the serving spoon, cut out some of the pumpkin flesh, being careful not to cut through the outer rind, and place the pumpkin over the stuffing on the plate.  If desired, sprinkle the pumpkin with a little cinnamon.
