Place the peeled bananas, 1 of the apples (washed, cored and quartered), 1/2 cup raisins, and ¼ cup apple juice (a little more if necessary) in the blender container. Set the blender on “high” speed, and run until ingredients are smooth.  Then add the remaining 2 washed, quartered, and cored apples to the blender container, and set the blender to “slow” or “chop” speed and chip the apples into small pieces. Set the mixture aside.

Preheat the oven to 350 degrees F.

In a dry bowl, mix the spelt or whole wheat flour, the oat flour or quick oats, cinnamon, baking powder, and mix together. Add 1-½ cups raisins and mix into the flour making sure that each raisin is coated with flour.

Add the banana, apple, raisin mixture and sufficient additional apple juice or water (by rinsing out the blender) into the flour mixture until smooth, but on the thick side so that the mixture won’t flow out on the baking or cookie sheet.

On a lightly oiled or non-stick baking or cookie sheet, spoon out about 2 or 3 heaping tablespoons of the mixture for each cake. Optionally, you can arrange pecan halves on top for decoration and added flavor.

We then bake the oven cakes in a preheated oven at 350 degrees F. for 25 minutes or until golden brown. When the Oven Cakes are firm, but still springy to the touch, they should be done. The first time you make them, you might want to check the bottoms to make sure they are not burning.

We like to serve these Oven Cakes with Maple Syrup, Apple Sauce, Banana – Date Syrup (see our recipe), or any other topping you desire. Oven Cakes are also good eaten like a cookie.

Serve and Enjoy!
