Candied Sweet Potatoes

Candied sweet potatoes are a delightful treat for Thanksgiving or any other festive meal. Preparation time is about 15 minutes, and baking time is about 15-20 minutes if cooked in a microwave oven. Leftovers can be stored in the covered baking dish or in another covered container in the refrigerator for a few days.

Ingredients:

3 lbs. Sweet Potatoes
1 cup Apple Juice
2/3 cup Dates, pitted
1 tsp. Cinnamon, ground

Candied Sweet Potatoes Cooking Utensils:

Dish, Glass Baking
Knives, Inexpensive Utility
Large Cooking Spoons
Measuring Cup, Liquid
Measuring Spoons
Microwave Oven
Vegetable Peelers
Vita-Mix

Candied Sweet Potatoes Preparation:

Wash and peel the sweet potatoes.  Cut them into bite sized cubes and place them in a covered baking dish that can be used in either a microwave oven or in an conventional oven.  Sprinkle on the cinnamon.

Place the apple juice and dates in the container of a high speed blender, cover, and run the blender at high speed until the dates and apple juice are creamy smooth.

Pour the apple juice and date mixture over the sweet potatoes and mix well.  Cover the baking dish and place in the over to bake.  Bake in the microwave oven on “high” (cooking time is about 15-20 minutes).  Bake in a conventional oven at 350 degrees F. (cooking time about 30-40 minutes).  Mix occasionally to insure uniform cooking.  When the sweet potatoes are tender, remove from the oven.  (If the apple date mixture has not thickened and coated the sweet potatoes, as shown in the photo, leave the lid off the baking dish for the last 5 minutes of baking time to allow the excess liquid to boil off, and mix again before serving.)
