Celery Stuffed with Chick Pea and White Kidney Bean Dip

Celery stuffed with chick pea and white kidney bean dip is a delightful vegan recipe treat for serving as an appetizer, an Horderve (Hors d’oeuvre in French), or as a snack. It takes about 10 minutes to prepare a plate of stuffed celery the size of the one in the photo, not including the preparation of the chick pea and white kidney bean dip. Leftovers can be stored in a covered container in the refrigerator for a few days.

Celery, stalks

Celery Stuffed with Chick Pea and White Kidney Bean Dip Preparation:

We begin by washing and cleaning the celery and selecting the number of stalks you want to stuff.  Then we cut each celery stalk into approximately three inch lengths.

When preparing the Chick Pea and White Kidney Bean Dip, we suggest keeping it on the thick side, so that it doesn’t flow out the ends of the celery pieces (see recipe).

Using a flat table knife, fill the cavity of the celery pieces with the dip, and arrange them on a serving plate.

Serve and Enjoy!
