Cranberry orange date relish is a wonderful and slightly tart vegan relish treat that goes with almost any meal, but is especially nice for Thanksgiving or other festive meals. It takes only about 15 minutes to prepare, and it will make 6 to 8 servings. If there are any leftovers, they can be stored in a covered container in the refrigerator for a few days.
Ingredients:
1 – 12-oz bag of Cranberries, fresh or frozen
4 small or 3 large Navel Oranges (should be equal in volume to Cranberries)
1/8 to 1/4 tsp. Cinnamon, ground
12-15 Pitted Dates
OR 1/8 tsp. or more Stevia Extract (powder) as a sweetener
Cranberry Orange Date Relish Cooking Utensils:
Food Processor
Knives, Inexpensive Utility
Measuring Spoons
Vita-Mix
Cranberry Orange Date Relish Preparation:
Wash the fresh Cranberries and peel the Oranges. Place all the ingredients in a blender or food processor container and chop into small pieces. Do not mash or puree. If you are using frozen cranberries, there is no need to wash them.
Taste the mixture for flavor and sweetness, and adjust to your personal taste. Be careful not to overdue either, for both sweetness and flavor improve over time.
Place in a tightly closed container and store in the refrigerator. It is best to prepare the day before serving to enhance the flavor and color, but if you are in a hurry, this relish should be refrigerated for at least two hours before serving.
The advantage to this relish is that no refined sugar is needed.
Serve and Enjoy!
We also like this relish as a topping for our banana cream, a non-dairy “ice cream” made from frozen bananas. Additionally, we have filled the “seed bowl” of a baked squash with this relish.
