Cranberry Orange Raisin Walnut Relish

Cranberry orange raisin walnut relish is a quick and easy vegan recipe and a delightful treat to make for Thanksgiving or any other holiday or festive meal. It takes only about 15 minutes to prepare and since it is a raw vegan recipe, there is not cooking. This recipe will serve 6-8 people. Cranberries can also be washed and frozen and stored in tightly sealed freezer containers for use any time of the year.

Cranberry Orange Raisin Walnut Relish

Ingredients:

1 – 12-oz bag of Cranberries
4 small or 3 large Navel Oranges (should be equal in volume to Cranberries)
1 cup Walnuts, pieces
One cup Raisins
1/8 to 1/4 tsp. Cinnamon, ground
1/8 tsp. Stevia Extract (powder) or add 1/4 cup more raisins
Note: If you are using frozen cranberries, you most likely will not need the stevia or extra raisins.

Cranberry Orange Raisin Walnut Relish Cooking Utensils:

Colander
Food Processor
Knives, Inexpensive Utility
Measuring Cups, Dry
Measuring Spoons
Vita-Mix

Relish Preparation:

We begin by washing the fresh Cranberries (frozen cranberries do not need to be washed) in a colander and peeling the Oranges. Place all the ingredients in the container of a blender or food processor and chop into small pieces. Be careful not mash.

Taste the mixture for flavor and sweetness, and adjust to your personal taste. Be careful not to overdue either, for both sweetness and flavor improve over time.

Place the relish in a tightly closed glass or plastic container and store in the refrigerator for at least 1 or 2 hours before serving to enhance the flavor and color.

If there are any leftovers, they can be stored in the refrigerator in the same closed container for a few days.
