Kale, Russian seems to be a specialty item, because we have only seen it on sale at a few farmers markets. See more about it below.
More About Russian Kale:
This is a bunch of Russian kale direct from the farmers market (before washing and cleaning). The leaves are softer than the curly variety, but has a slightly stronger flavor, somewhat like a mild mustard green. It can be added raw to green smoothies, and salads, or it can be cooked in a variety of recipes. There is also a red variety of Russian kale. We have not seen Russian kale for sale in the produce section of regular supermarkets, even though we looked for this and and the red variety, and have even asked for it.
We could not find any specific nutritional information for these greens, but the literature we saw says that some sources say it has less calcium, and perhaps a little oxalic acid (which is also in spinach).
