Mashed potatoes are a family favorite in many households that can easily be made vegan by using non-dairy milk. Preparation time is 10-15 minutes, and cooking and mashing time is about 30 minutes.

Mashed Potatoes Preparation:
The finished volume of mashed potatoes is slightly larger than the potatoes, so select the number of potatoes to be used based upon how much you think the people will eat in a single meal, since they don’t store very well.
Wash and peel the potatoes and place them in a covered dish for cooking in the microwave oven, or in a pot of boiling water to cook them on the stovetop.
When the potatoes are tender, stop cooking. If cooking on the stovetop, remove them from the water, and place in a large mixing bowl.
Mash the potatoes with a potato masher or smood masher, and add a little rice milk, soy milk, or water (cooking water) to aid in the mashing and to achieve the desired consistency.
Serve and enjoy as is or with vegan gravy. Let the people at the table add their own salt and pepper as desired.
