Oven-Baked un-Fried Potatoes

Makes 3-4 servings

1 lb. Potatoes, washed (5 medium or 2 large)
2 Tbsp. oil
1/2 tsp. paprika
1/2 tsp. thyme or rosemary (optional), or both
Salt to taste

Preheat oven to 450˚. Cut potatoes into 1/3” wide strips. Mix in a bowl with spices, herbs & oil. Spread potatoes in single layer on non-stick cookie sheet (lined with parchment paper for easy cleanup, optional) and cover with aluminum foil. Bake 20 minutes. Remove foil, turn potatoes and bake 10-15 minutes longer until browned. Add salt to taste.

Tip: For softer, fluffy fries, after cutting potatoes, place them in a bowl and cover with water for 30 minutes or more. Drain, season and cook as directed. You can also reduce oil by half when potatoes are pre-soaked.
