Peanut Butter Carob Fudge Dip

Peanut butter carob fudge dip is a delicious vegan treat that can also be used as an icing or a topping for vegan “ice cream.” The preparation time of the quick and easy recipe is about 10 to 15 minutes. Leftovers, if there are any, can be stored in a covered container in the refrigerator for several days.

1 Cup Water
1/2 Cup Carob Powder (dark or medium roasted)
2/3 Cup Dates (pitted)
1/2 Cup Peanut Butter (natural, smooth, unsalted) OR 1 cup Peanuts (dry roasted, no salt)
1 tsp. Vanilla Extract

Cooking Utensils:

Measuring Cup, Liquid
Measuring Cups, Dry
Measuring Spoons

Peanut Butter Carob Fudge Dip Preparation:

We begin by placing all of the ingredients in a high speed blender, and blend at high speed until the peanut butter carob fudge is smooth. To thicken the fudge, we add a little more carob powder and run the blender at high speed again until all the additional carob powder has been blended into the fudge dip.

That is all there is to it. We like to serve fudge sauce with fruit, such as apple slices, oranges sections, or banana pieces (you will need a fork for dipping the banana pieces). We have even dipped popcorn into this dip.

This fudge sauce also makes a great icing for cakes, cup cakes, and brownies, and for a topping for vegan “ice cream” such as banana cream. And if there is only a little left in the serving bowl or container, someone will always finish it off with a spoon.

For a snack, we have even put a little of the delicious fudge sauce on a peeled banana, taken a bite, and then put a little more sauce in the bitten top, and continued doing this until the banana was consumed.
