Perfect Pancakes

Serves 4-6

2-1/2 c. mixture of whole wheat pastry flour and/or unbleached white flour
1/4 c. soymilk powder or soy flour 
4 tsp. baking powder
2 tsp. baking soda
1 tsp. salt
3 c. fruit juice (apple, orange…)

Mix together dry ingredients in large bowl, then stir in fruit juice and mix briefly (lumpy is okay).

Heat nonstick griddle or skillet (lightly oiled) spoon batter onto pan.

When tops bubble, turn and cook until other side is golden and middle is cooked.
Serve with your favorite toppings.
