Plantain coconut raisin oatmeal spice cookie bars with pecans are a delightful vegan treat for dessert or as a snack for any time of the day. This recipe will make about 12-18 cookie bars. The preparation time is about 15 minutes, and the baking time is about 20-25 minutes. Since these cookie bars contain no preservatives, we suggest storing the leftover cookie bars in a covered container or sealed plastic bag in the refrigerator.

Ingredients:

1 cup Spelt Flour or Whole Wheat Flour
3 cups Rolled Oats (oatmeal), quick
2 tsp. Cinnamon, ground
2 tsp. Allspice, ground
1/2 tsp. Nutmeg, ground
1/2 tsp. Cloves, ground
One cup Coconut, shredded, unsweetened
3 cups Raisins
2 Plantains, ripe
1 cup Apple Juice
Pecan Halves

Plantain Coconut Raisin Oatmeal Spice Cookie Bars with Pecans Preparation:

Preheat your oven to 350 degrees F. (175 degrees C.), or you can use your microwave oven to make these cookie bars.

Place the spelt, or whole wheat flour, and the quick rolled oats (oatmeal) in a bowl and mix together.  Add the cinnamon, allspice, nutmeg, and cloves and mix well.  Add the coconut and 2 cups of the raisins and mix well to ensure that the raisins are not sticking together, and that they are thoroughly coated with the flour mixture.

Place the apple juice, peeled plantains, and the remaining cup of raisins in the container of a high speed blender. Cover and run at high speed until all the ingredients are thoroughly blended and smooth.

Add the plantain-raisin mixture (liquid) to the flour mixture (dry) and mix thoroughly with a stiff spatula or spoon.  After adding all the blended, liquid ingredients, if the cookie dough is too stiff you may add a little more apple juice or water; however the dough for cookie bars should be stiff.  (To test for dough stiffness, we stick a soup spoon upright into the dough.  If the dough is stiff enough, the spoon will remain upright.)

In a lightly oiled ceramic or glass baking dish, place the cookie dough, pressing out to the edges, and smoothing to uniform thickness of not more than 1/2 inch.

Place the pecan halves on the top of the cookie dough and press lightly into the dough.

Baking:

Place the baking sheet or dish in the preheated oven and bake at 350 degrees F. for 20-25 minutes.  Various ovens bake differently, so we suggest that you begin checking for doneness after 15-20 minutes of baking.

If baking in a microwave oven, use the bake setting; or if you have an automatic baked potato setting, use that.  We have found that with a stiff dough, the automatic baked potato setting will shut off when the cookie bars are baked.

The cookie bars should be firm, but still soft enough to be a little “springy.”  Be careful not to over-bake.

When the plantain coconut raisin oatmeal spice cookie bars are baked, remove from the oven, cool, slice into squares or rectangles and enjoy.
