Sauerkraut – Photo and Description from Vegan Venue
Sauerkraut is a prepared fermented cabbage vegan pantry ingredient that we use in a few of our vegan recipes, and it can also be eaten as purchased.
Sauerkraut is shredded, salted, and fermented white cabbage. We have not found a lot of difference between the quality and taste of sauerkraut sold in cans, jars, or plastic bags, though we have had one brand of canned sauerkraut with an off flavor; thus, we stay with the brands we like. We use sauerkraut in several of our recipes. The only drawback is the high salt content, but other than that the flavor is great! See the nutritional chart below.

Over the years, people have been asking us, “What do vegans eat?” This is probably because they first think about a flesh product first and everything else as a side dish. So, we began publishing the huge variety of plant foods that are available for us to eat in this section of our web site. Additionally, we are always on the lookout for something new to add to our collection and experiment with to incorporate into our meals. We have also found that eating mostly unprocessed plant foods make us much more healthy.
