Squash, Lita are a summer variety that we have not seen in any supermarkets. At the present time they only seem to be available at farm stores, though some specialty markets may carry them. See more about them below.
About Lita Squash:
In September of 2013, we found this lita squash, a variety of summer squash, at a local farm store. This was our first experience with this variety of squash, so it sparked our interest and we decided to do some culinary experimenting. Lita squash are similar to zucchini, except for the fact that they are sweeter. They can be eaten either raw or cooked, and everything is edible except the stem and flower ends. Raw pieces can be added to salads, and they can be cooked or roasted as part of many different recipes such as those calling for zucchini or yellow squash. The only negative thing about them is that they cost a little more. We could not find any specific nutritional information for lita squash.

Some background information:
Over the years, people have been asking us, “What do vegans eat?” This is probably because they first think about a flesh product as the main meal. After that they then think about everything else as a side dish. So, we began publishing the huge variety of plant foods that are available for us to eat in this section of our web site. Additionally, we are always on the lookout for something new to add to our collection. This way we can experiment with to incorporate into our meals. We have also found that eating mostly unprocessed plant foods make us much more healthy. It’s a great way to live and our foods provide almost all of our vitamins.
