Stuffed acorn squash halves make of beautiful and very enjoyable vegan main dish for any festive meal, such as Thanksgiving. If you desire to make only two halves, you can cook them in a covered baking dish in a microwave oven, but with more, it is quicker to make the stuffed acorn squash halves in a conventional oven preheated to 350 degrees F. If the stuffing is already made, the preparation time in only about 5-10 minutes per squash, and the baking time is only about 25 minutes in a microwave oven. Each acorn squash will make 2 servings. Additionally, we like to make several side dishes to enhance the meal.
Ingredients:
Acorn Squash (2 servings per Squash)
Vegetable Rice Stuffing (Greek Style)
Cranberry Orange Relish
Cooking Utensils:
Covered Ceramic Baking Dish
Knives, Inexpensive Utility
Large Cooking Spoons
Stuffed Acorn Squash (Greek Style) Preparation:
Wash the Acorn Squash. Lay the squash on its side and cut in half along its length (top to bottom). Scoop out the seeds (save them for roasting if you desire).
Stuff the Squash halves with the prepared and cooked Greek style stuffing. Bake in a covered roasting pan at 350 degrees F. for about 1 hour, or until the acorn squash is tender.
We suggest serving the acorn squash with additional stuffing, and cranberry orange relish as shown in the above photo. Or, you can serve everything family style, which we like to do, and that way you let each person at the table choose what they want on their plate. Serving family style also lets everyone at the table feel comfortable about having additional helpings of the side dishes.
